Ensalada Rusa ("Russian" Salad)

Since I've been here in the US, I've learned to cook a lot of recipes that I've never cooked before. One recipe that I've learned to cook is the Ensalada Rusa (Russian Salad). My hubby loves to eat potatoes so I searched for potato recipe and I found this. I have cooked this several times already and hubby and I like it.

Ensalada Rusa is Dominican's favorite salad. It is usually served on special occasions and is a traditional component of the Christmas dinner.

1/2 lb of potatoes
1/2 lb of carrots
1/2 cup of sweet corn
1/2 cup mayonnaise
1/2 cup of peas
1 apple diced into small cubes (optional)
i medium red onion
3 eggs

Boil the potatoes, carrots and eggs. Peel and dice into small cubes. Mix in the rest of the ingredients. Adjust salt to taste. Put in the refrigerator for 30 minutes prior to serving.

The Stranger

This is different and interesting.

A few years after I was born, my Dad met a stranger who was new to our
small Texas town. From the beginning, Dad was fascinated with this
enchanting newcomer and soon invited him to live with our family. The
stranger was quickly accepted and was around from then on.

As I grew up, I never questioned his place in my family. In my young mind,
he had a special niche. My parents were complementary instructors: Mom
taught me good from evil, and Dad taught me to obey. But the stranger...he was our storyteller. He would keep us spellbound for hours on end with adventures, mysteries and comedies. If I wanted to know anything about politics, history or science, he always knew the answers about the past, understood the present and even seemed able to predict the future! He took my family to the first major league ball game. He made me laugh, and he made me cry. The stranger never stopped talking, but Dad didn't seem to mind.

Sometimes, Mom would get up quietly while the rest of us were shushing
each other to listen to what he had to say, and she would go to the
kitchen for peace and quiet. (I wonder now if she ever prayed for the
stranger to leave.)

Dad ruled our household with certain moral convictions, but the stranger
never felt obligated to honor them. Profanity, for example, was not
allowed in our home... Not from us, our friends or any visitors. Our
longtime visitor, however, got away with four-letter words that burned? my
ears and made my dad squirm and my mother blush.

My Dad didn't permit the liberal use of alcohol. But the stranger
encouraged us to try it on
a regular basis. He made cigarettes look cool, cigars manly and pipes
distinguished. He talked freely (much too freely!) about sex. His comments
were sometimes blatant, sometimes suggestive, and generally embarrassing.

I now know that my early concepts about relationships were influenced
strongly by the stranger. Time after time, he opposed the values of my
parents, yet he was seldom rebuked... And NEVER asked to leave.

More than fifty years have passed since the stranger moved in with our
family. He has blended right in and is not nearly as fascinating as he was
at first. Still, if you could walk into my parents' den today, you would
still find him sitting over in his corner, waiting for someone to listen
to him talk and watch him draw his pictures. His name?....

We just call him, "TV."

He has a wife now....We call her "Computer."


I bought this hydrangea four years ago. I was attracted with the pink color of it's flowers. This is a perrenial plant so it comes back every year just like the roses and day lilies. I prefer buying perrenial plants than the annuals. I don't wanna waste my money with plants that will die on winter and don't come back. There is also a blue hydrangea and I want to have that too to add to my flowers.

White Flowers

I don't know the name of these flowers but I think they belong to the fern family. A Filipina friend of mine gave it to me when we were still in Alvarado. When we moved here, I brought it with us and I planted it in the ground. It comes back every year and the white flowers last for almost two months. I haven't seen flowers that last that long except this one.

My Roses

I'm really fond of gardening and I love planting flowers and vegetables. Last spring, my flowers bloomed beautifully and of course I took some snapshots of them as my souvenir. Gardening and photography are just some of my hobbies. I love roses and I am planning to buy other colors this year. I want to have red and white roses.

I took these photos last summer. These are day lilies that are planted in our yard. I love taking photos of flowers. They're so bright and colorful. Just want to share it here. I have more flowers that I wanna share next time.

My Desktop Wallpaper

I just changed the wallpaper at the desktop of my laptop computer. I got tired looking at the plain wallpaper so I changed it with our photo taken when we went to Colorado Springs. I love looking at the rocky mountain view in that photo at the Garden Of The Gods so I put it as a wallpaper in my desktop. Now every time I open my laptop, I see this photo of my hubby and me. I love my own, he-he-he!!!

I Baked A Cake!

I've been baking cakes because my hubby likes it. Since we have lots of pecans, I thought of baking a Pineapple Pecan Cake for our lunch today. It's my first time to bake this kind of cake. We had James with us this lunch and when we ate our dessert, that's the cake of course, to my surprise, the cake taste so good. My hubby and James said it's really a good and yummy cake. I told them I would definitely bake this kind of cake again. The frosting taste so good too. I think it's a lot better than those bought from the stores. If you want a good-tasting cake, here's the recipe.

Pineapple Pecan Cake

2 cups sugar
2 cups all-purpose flour
2 teaspoons baking soda
2 eggs
1 (20 ounce) can crushed pineapple, undrained
1 cop chopped pecans

1/2 cup butter, softened
1 (8 ounce) package cream cheese, softened
1 1/2 cups confectioners' sugar
1 teaspoon vanilla extract

In a mixing bowl, combine the first 5 ingredients; mix well. Stir in chopped pecans. Pour unto an ungreased 13 x 9 x 2 in. baking pan. Bake at 350 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool completely. In a mixing bowl, combine all frosting ingredients, beat until smooth. Frost cake.

It's A Beautiful Day!

We have a beautiful day today! It's Sunday and what a great time to be in the house of the Lord to worship him and listen to the message of our pastor. He delivered a good message this morning and his text verse is found in Psalms 9:17 which says, "The wicked shall be turned into hell, and all the nations that forget God." America is now going down. One reason is that it's people are turning their back to God. They removed the prayers and Bibles in the school and they removed the word Christmas and replaced it with Holidays. This nation which had been so blessed is now going down and that's the main reason. I remember that when I was still in the Philippines, I attended an end-times seminar and one of the prophecy is that America will become a weak nation and it's coming true. The US dollar is becoming weaker and there are lots of natural disaster and calamities here like fires, hurricanes, falling bridge and who can forget the 9/11. The prophecy is coming true. Unless this nation will acknowledge God and go back to Him, America will become a waste nation.

Coconut Oil

When I was young I remember that my grandma used to make coconut oil for her hair. She grated mature coconuts and cooked it with water. When the water were all gone, the oil started to come out from the grated coconuts. My grandma used to make a few bottles of coconut oil mainly for her hair. I also applied it in my hair and made my hair healthier. I remember we also put the coconut oil in our rice and add some "bagoong" and it tasted yummy to me when I was a kid. Now I learned that coconut oil is the best oil in the world. The many benefits of coconut oil are finally reaching the mainstream.

Chicken Recipe

Tonight I made a chicken with fruit salad. It's Sunday tomorrow and we'll be having a company here after our church service. We asked James to come to our house to install the scanner that his wife Sofia gave me a few month ago. I like that scanner because it's handy. The one I'm using is bulky. They bought that scanner in Japan and I don't know how to install it, besides I don't have the software to install. So anyway, James will be coming here tomorrow and he will have lunch with us and he will install the scanner. The chicken with fruit salad is a recipe of Sofia that she gave me. She call this recipe chicken dumpling but I call it chicken with fruit salad. It's easy to make and it's yummy. Here's the recipe:

Chicken With Fruit Salad
2 cans pineapple chunks
2 cups chicken breast, cubes (cooked)
2 stalks celery. chopped
½ cup green onions, chopped
1 ½ cup seedless red or green grapes
½ cup chopped peanuts
1/3 cup peanut butter
½ cup mayonnaise
2 tbsp half & half or evaporated milk
1 clove garlic, minced
1 tbsp mild curry powder (McCormick)
1 tbsp apricot jam
salt & pepper to taste

Mix all the ingredients. Refrigerate for at least 30 minutes before serving.

Nice Weather!

After a few weeks of cold weather, it suddenly warmed up today. Boy! Was I glad to go out again and walk. I also picked up a lot of pecans in our backyard. I filled up two plastic bags of pecans today. There are still a lot more of pecans to be pick up in our backyard. I got tired so I will pick them up some other day. According to the weather forecast, it will be warmer tomorrow until Monday. Then it will be in the 50's the rst of the week. I'm glad and I just wish the temperature will stay like this.

Our Washing Machine

I was having problems with our washing machine since Wednesday. While I was washing our clothes, the washer just suddenly stopped. I kept turning and turning the start button. It will wash again but when it reached a certain point, it stopped. I told my hubby about it when he got home. He went to see it but wasn't able to find what's wrong. Our clothes were stuck inside the washing machine for a few days already. So this morning, I told hubby that we need to buy another washing machine. But before we went out, once again he went to check the washing machine. Then he came to me and said he found out what was wrong. A wire was disconnected that's why it quit working. My hubby fixed it and the washing machine is again working. It's good my hubby knows how to repair it. I was glad because I was able to wash our clothes and also we did not have to spend money for a new washer. It made me appreciate our old washing machine. Though it's already old, it still can wash our clothes and we intend to use it until it quit working.

Walk, Lisa Walk...

For the past few days, I've been walking on my treadmill again. It's been a while that I didn't use it because I preferred walking outside. But since it got so cold, I can't go out so I was back walking on my treadmill again. Yesterday I walked 40 minutes and this morning I walked 30 minutes. I planned to do this regularly so I can burn more calories. When the weather will be warmer, I will go out walking again. But for now, the treadmill is where I walk...

Excited Parents

My friend Ann and her hubby Jeff came here in the house this afternoon. She asked me a favor to scan the ultrasound result of her baby. After I scanned it, we uploaded it to her Friendster. She's 9 weeks pregnant and she's so excited to have her first baby. They have been praying to have a baby and the good Lord answered their prayers. Babies are heritage from the Lord and every couple wants to have one. I'm not blessed with a baby but I still thank the Lord. My hubby is more than a blessing to me and also my step-kids. They are my family.

Tired Blogging?

Blogging is fun especially I get to earn money through it but staying in front of the computer often has also it's downside. My vision is becoming blurry and the back of my neck is strained. I've been massaging it for the past few days and it got better. Also I'm using now my eyeglass when I'm in front of the computer to protect my eyes. I planned not stay long in front of my laptop but when I see those opps in PPP, I have to grab them. Sayang yong pera di ba? But after these, I will have to rest and do my exercise. So blogging, here I go...

How To Bring Happiness In Your Life

“Don't worry, be happy.” This sounds like such a simplistic phrase, but there is great power and wisdom in it. This tells us to focus on what we want rather than what we don’t want. When we focus on what we want, our actions take us nearer to our goals in life. One way to guide your life toward happiness is simply to count your blessings. Here are some principles to use to be happy.

1) Improve your relationships with friends and family – Happiness starts at home. Start by improving your relationship with your parents, brothers, sisters, and children. Smile when you greet them, do things for them, don't allow them to get angry with you. Maintaining healthy loving relationships and friendships can promote happiness. Remember that love makes you beautiful.

2) Be an optimist - Optimism generates good feelings.

3) Develop a genuine smile and laugh a lot - Act happy - It works. Smile into the mirror for a half hour without stopping. Smiling makes you happy and the more you smile the more happy you become. We all like people who smile. It also makes us more attractive.

4) Pray - Become religious or spiritual - This only works if you believe in God. If you want to be happy then ask God to make you happy. Prayer helps you accomplish things.

5) Be generous and share with others - Give more than you receive because being generous will make you happy.

6) Treat time as a friend - Don't watch the clock.

7) Exercise your mind - Keep yourself busy with some new project or ideas.

8) Work your body - Exercise regularly. Studies show that aerobic exercise is an antidote for mild depression and anxiety. "Happy minds reside in sound bodies," says Dr. Myers.

9) Have fun in life - Keep cool under pressure.

10) Pursue achievable goals.

11) Have high confidence in yourself.

12) Respect the disadvantaged.

13) Age gracefully.

14) Give compliments - Take every opportunity to be complimentary. Want to make someone like you? Every time you meet a person smile and give them a compliment.

15) Be honest - With honesty comes openness. People respect honest and open minded people.

16) Keep an open mind - Most people seem to think that they know everything that they need to know. There's plenty of wisdom to go around.

17) Treat difficulties as challenges –Life's an adventure and every obstacle in life is one of its challenges. Treat life as a game. What fun would a game be if you could never lose?


Being happy is really a choice we make. The secret of Happiness is simple, very simple - what is it? You decide if you want to be happy! Happiness is free. You can feel happiness, this very minute, if you so choose.

If you continue to focus all your energy and attention on what you want, you’ll soon find yourself happy. Realize now that true happiness results from sharing generously of yourself, your mind, emotion and spirit, with all those who come in contact with you.

Be an optimist.

Do kind deeds for others unselfishly. Explore the deeper resources within you by praying to God from your heart. Through sincere prayer and mindful meditation you will attain the highest achievement in life - the discovery of your eternal happiness with God.

We need to set our goals wisely and to develop happy-thought strategies and to surround ourselves with encouraging and positive people.

Pursuing truth, wisdom and a virtuous life - or just getting on with the duties and chores of daily life at work and home, often brings happiness as a by-product. My ultimate goal is to bring happiness to all my friends, family and all souls that come in contact with me. How can I possibly accomplish this?

Simple…I sincerely hope that after reading this message you will SMILE for me.

Cloudy & Windy Today

It warmed up a little bit tonight. Maybe because the wind had stopped blowing. It was so cold this morning, cloudy and windy. I just stayed in the house all day and didn't even want to go out. The cold seems to penetrate to my bones, he-he-he! I just wish winter will be over and spring will be here. That's my favorite season but we still have two months to go to endure the cold weather. I just hope it won't be so cold the next few days. I miss going out and walk and pick up some pecans.

Sunday Meals

It's Sunday today and my hubby and I went to church this morning and tonight. We were always blessed with our pastor's messages. He's such a good preacher and evangelist. While on the way home from church this morning, hubby and I agreed that we just buy our lunch at Subway. It's been a while that we haven't had sandwiches from there. We came home first and changed his clothes because he was wearing a suit. Then he went to buy our lunch in Subway. When he came back, he told me he bought three footlong sandwiches. They have a special offer of buy 2 and get 1 free. I ordered a roast beef sandwich with everything on it except jalapenos. Hubby got ham and turkey sandwiches. I can't eat all the footlong sandwich in one meal so I ate the other half for supper. Hubby ate his ham sandwich for lunch and the turkey sandwich for supper. It saved me from cooking today.
